Wilder Lazo produces award-winning coffee at his farm, Bella Alajandria. He's known for his deep understanding of coffee genetics and his commitment to quality. For this lot, the ripe cherries are floated to remove any low-density fruit. They’re then depulped and fermented anaerobically with a CO2 injection for 48 hours. The coffee is dried in a drying chamber, then transferred to parabolic trays until it reaches a target moisture content of 10.5%. The result is a cup with notes of sweet lemon bar, orange blossom, and fig.
